Maple Oat Cookies

Time: 30ish minutes plus overnight rest

Instructions

  1. In a stand mixer, add the maple sugar and butter, then cream with the whisk attachment on medium speed (speed 6 on a Kitchen Aid) until a pale khaki color. This will take around 5 minutes. Make sure to scrape down the sides of the bowl often to make sure it is evenly mixed. 
  2. Add the vanilla and egg, then mix on medium low until thoroughly combined. 
  3. Switch to the paddle attachment and add the rest of the dry ingredients to the bowl. Mix until barely combined, then roll into 1 oz balls (about 18 total) and roll in maple sugar until covered. Cover and refrigerate overnight.
  4. The next day, preheat the oven to 350­°F and put all the cookies on a sheet tray spaced at least 2 inches apart. Bake for 15-18 minutes until browned thoroughly. Place on a cooling rack for at least five minutes until less soft, then enjoy! Store in a sealed container at room temperature after completely cooled.
