Apple Fritters

Ingredients
Apple Fritters
- 3 apples, cut into 1/4" cubes
- 2 Tbsp. Burlap & Barrel Royal Cinnamon
- 2 Tbsp. sugar
- 1 cup Maine Grains Red Fife Wheat Flour
- 1/2 cup potato starch
- 3/4-1 cup milk, warmed to about 110°F
- 1/2 tsp. baking soda
- 1 packet active dry yeast
- 1 egg
- 1/2 Tbsp. Vanilla Bean Project Vanilla Bean Paste
- Pinch salt
- 2 cups oil for frying (peanut, canola, etc.)
Cinnamon Glaze
- 1 cup powdered sugar
- 1/2 Tbsp. Vanilla Bean Project Vanilla Bean Paste
- 2-4 Tbsp. milk
- 1/2 tsp. Burlap & Barrel Royal Cinnamon
- 1/2 tsp. kosher salt
Equipment
- 3 medium mixing bowls
- Large cast iron pan
- Thermometer
- Sheet tray with a drying rack
Instructions
Apple Fritters
- In one of your mixing bowls, mix your apples, cinnamon, and sugar and allow to sit to the side while you prepare your batter.
- To a second bowl, add your flour, potato starch, baking soda, and salt. Whisk to combine.
- Add your milk, egg, and vanilla to the bowl and mix until thoroughly combined. Add in your apples (including juices from the bottom of the bowl) and fold it all together. Allow to proof at room temperature for 15 minutes.
- Heat your cast iron over medium heat until the oil is at 350°F.
- Use a 1/4 cup to scoop the batter into the oil and fry for 2-3 minutes each side.
Cinnamon Glaze
- In your final bowl, add all the glaze ingredients, starting with only 2 Tbsp. of milk. Whisk all of the ingredients together until completely combined. You want the mixture to be thin enough to run, but not liquid-y. Just enough to come together lightly.
- As you remove the fritters from the fryer oil, dip them into the glaze with the top facing down, then turn them over and place them on the cooling rack until they are cool enough to eat.
