Toss the bread cubes with olive oil, then place onto a sheet tray. Cook for 10-15 minutes, until the edges are crispy, but the center is still soft.
In a mixing bowl, add your shallots, vinegar, chili flakes, and salt. Let rest while your bread is cooking.
When the bread is done, add your tin of Sweet Prince tomatoes to the mixing bowl and gently mix together with shallot mixture until combined. (Try not to break the tomatoes up too much!)
Add the avocado and bread to your bowl, toss until the bread is thoroughly coated. Serve immediately!
