Rye Dutch Baby with Burnt Caramel Banana Sauce

Ingredients

Burnt caramel banana sauce 

    Equipment

    • Blender
    • Sauce pan
    • 8" cast iron skillet

    Instructions

    Rye Dutch Baby

    1. In the carafe of your blender, add rye, AP flour, eggs, milk, maple sugar, and salt. Blend on low until thoroughly combined, scraping the bottom of the carafe when needed to ensure that it completely mixes. 
    2. Pour into a pint container and place into the fridge to rest for at least 30 minutes. You can make the batter the night before and rest up to an entire day. 
    3. Place your skillet into the oven and preheat to 450°F.
    4. When the oven is preheated, using an oven mitt, remove your pan from the oven and swirl your butter around the pan, coating an inch up the sides. 
    5. Quickly add your batter, then place back into the oven to cook for 10 minutes. 
    6. Lower your oven temperature to 375°F and cook for another 8-10 minutes, until golden brown on top.
    7. Serve in the cast iron out of the oven topped with ice cream and burnt caramel banana sauce. Enjoy!  

    Burnt Caramel Banana Sauce

    This may make smoke in the kitchen. Be prepared to move quickly and aerate the room.

    1. Heat your sauce pan on high and add 1/2 cup of your sugar to the bottom. Wait until it starts to bubble up, then swirl the pan to mix in the rest of the sugar. Continue heating until all the sugar is dissolved, then the mixture will turn a deep golden color. 
    2. Being careful not to splash any caramelized sugar on yourself, add in your banana and butter. The mixture will bubble aggressively. 
    3. Cook for 2 minutes until the banana has softened and started to break down. Add your cinnamon, salt, and milk, then stir to combine. Cook for 5-10 minutes or until thick enough to coat the back of a spoon. 
    4. Add in your last 1/4 cup of sugar and stir until homogenous.
