Horchata & Overnight Oats
Time: 1-2 overnights, active time 2-5 minutes

Ingredients
For Horchata
- 4 oz raw almonds
- 1/2 cup uncooked Jupiter White Rice
- 1 tsp ground cinnamon
- Filtered water
- 1/4 cup maple syrup
For overnight oats
- 1 cup Organic Rolled Oats
- 1 tsp chia seeds
Equipment
- High speed blender
- Quart container
- Cheesecloth
- Pint container
Instructions
- In a quart container, add your raw almonds, rice, and cinnamon. Add filtered water to top off the container, stir to combine, then put in the fridge to soak overnight.
- The next day, add the soaking mixture to the carafe of your blender and blend, slowly increasing the speed to high. Blend with maple syrup until the mixture is completely broken down and seems like a thick slurry, roughly 1-2 minutes.
- Filter this mixture through a cheesecloth, using the back of a spoon to move the slurry around to get as much liquid as possible through.
- Serve over ice with cinnamon sprinkled on top or continue to make overnight oats.
Overnight Oats
- Add oats and chia seeds to a pint container, then fill to 1 inch from the top with horchata.
- Let sit in the fridge overnight and eat the next morning.
